Spaguetti alle vongole, otra versión /another version


Este es uno de los clásicos italianos de pasta, un plato con magia, rápido y con pocos ingredientes.
Es importante seguir algunos pasos sencillos como cocer la pasta en su punto y tenerlo todo bien preparado para poder trabajar rápido y el plato llegue caliente a la mesa. Pero si tenemos esas pequeñas cosas en cuenta el éxito es seguro.

Ya hicimos una versión "blanca" cuando iniciamos el blog (aquí el otro vongole) pero hoy ponemos una con salsa de tomate. En este caso aprovechamos ese caldo que sueltan las almejas al abrirse, lo reducimos y ahí tenemos un gran sabor que con  el ajo y el tomate harán que nuestro plato sea muy rico.




Ingredientes para dos personas

200 gr de spaguetti
500 gr almejas frescas
1 lata de 400 gr de tomates entero pelados y en su jugo
aceite de oliva para el refrito
1 diente de ajo picado
perejil picado y dos puntas para decorar
sal y pimienta recién molida


Así lo hice:

Lo primero lavar las almejas bajo el grifo y ponerlas cubiertas de agua con sal para eliminar arena. Dejamos unos 30 minutos.
Luego las sacamos del agua (revisando por si alguna no está bien) y las ponemos en una sartén con una cucharada de aceite. Tapamos y dejamos hasta que se abran. Cuidado de no sobrecocinarlas, en cuando se abran las retiramos y dejamos enfriar. Luego retiramos la carne de las almejas, dejando varios en su concha (5 por plato) para decorar al final, recojemos el caldo colándolo y reservándolo.

En una sartén amplia o en una cazuela (luego lo mezclaremos todo, incluso la pasta) ponemos aceite y doramos ligeramente el ajo y luego un poco de perejil picado. Cuidando que solo se dore levemente. Añadimos el caldo de las almejas y dejamos reducir.

Añadimos el tomate. Suelo añadir todo el contenido de la lata tal cual, lo tomates enteros y su jugo, luego rompemos los tomates con una espátula o cuchara de madera. Salamos y pimentamos.
Serán unos 10 minutos hasta que tengamos la salsa de tomate, vemos cómo se separa el aceite en la superficie.

Cocemos la pasta en abundante agua salado hirviendo, hasta al dente.

Volvemos a la salsa, añadimos las almejas, dejamos que dé un hervor, probamos de sal y pimienta. Agregamos la pasta escurrida y mezclamos.
Pasamos al plato y decoramos con las otras almejas reservadas y con su concha, perejil picado  y una punta de perejil rizado.

This is one of the classic Italian pasta dish with magic, fast and with few ingredients.
It is important to follow some simple steps as cook pasta in your point and have everything well prepared to work fast and hot dish arrives at the table. But if we take into account those little things success is sure.

We already did a "white" version when we started the blog ( here the other vongole ) but today we put a tomato sauce. In this case we take the broth that drop clams open, reduce it and there we have a great taste with garlic and tomato will make our dish is very rich.




Ingredients for two

200 gr of spaghetti
500 g fresh clams
1 can of 400g of peeled whole tomatoes and their juice
4 tablespoon olive oil 
1 clove garlic , minced
chopped parsley and two tips for decorating
Salt and freshly ground pepper


I did it like that:

First wash the clams under running water and covered them with salt water to remove sand. We left about 30 minutes.
Then we remove from the water (checking if some is not good) and put them in a pan with a tablespoon of oil. Cover and leave until they open. Try not to overcook, then withdraw them open and let cool. Then remove the meat from the clams, leaving several in the shell (5 per plate) to decorate the end, we collect the straining and reserving broth.

In a large skillet or pan (then mix everything, including pasta) put oil and garlic lightly brown them and then a little chopped parsley. Caring only slightly browned. Add the broth and let reduce clams.

Add the tomato. I usually add the entire contents of the can as it is, the whole tomatoes and their juice, then we break up the tomatoes with a spatula or wooden spoon. Salt and pepper.
They will be about 10 minutes until we have tomato sauce, we see how the oil is separated on the surface.

Cook the pasta in plenty of boiling salted water until al dente.

We return to the sauce, add the clams, we bring to a boil, salt and pepper tried. Add the drained pasta and mix.
We put in the dish and garnish with reserved clams, chopped parsley and a tip of curly parsley.
